Bibigo Kitchen (Fashion Valley)

There have been quite and few new restaurants opening in San Diego lately!!! I had the opportunity to check out Bibigo Kitchen in Fashion Valley mall last week, which has only been open for couple weeks, and I was excited to see what they had on the menu!!

Bibigo Kitchen I think is best explained as Korean Fusion. They have brought over some traditional Korean flavors while mixing in what we are use to here in America. Let me tell you they didn’t disappoint!!! The flavor combos and variety of options were so good. I personally love to step out and try something new, and I hadn’t really had many Korean dishes before (with the exception of Korean BBQ).

Along with great and different food options… there were a ton of options for teas. I personally love a good tea, so it was like tea heaven. I had the Matcha Gyokuru!!! There is coffee as well, if that’s your jam along with regular soft drinks and waters.

I got to try several appetizers and a couple of main entrees. The appetizers were the Mandu Sampler, Bibigo mini Chicken wontons (which were my favorite) and Bibigo Beef & Vegetable Mandu (these kind of reminded me of egg rolls, but they aren’t fried). I tried Kimchi for the first time!!! It was bursting with flavor and was good mixed in with my bowl that I had later. I also had Kimchi Cucumbers as well. There were so many dishes coming to the table I didn’t know what to do. I needed another stomach to finish all of the food.

My main entree was the Seoul Bibimbap, which was Beef with assorted veggies and rice with an Egg on top. There was also a chili sauce and their house sauce to add in. The rice came in a golden bowl and everything else was on the side to mix in together. I enjoyed every bite!!!

Dessert was Injeolmi Tiramisu. It was like a custard with funnel cake pieces on top. I don’t eat dairy, so I only tired a very little bit ( didn’t want to risk the stomach ache later). But, I did have the funnel cake pieces and those were really good. Super crispy with so much cinnamon and sugar flavor.

I had a great experience at Bibigo Kitchen. The wait staff were all so sweet, the food came out really quickly and everything was really hot and fresh. I can tell that the chefs really care about what they are serving and pay attention to the details. They also pride themselves on only using the freshest ingredients!!
