Chocolate Coconut Squares
I mentioned this in another post already… but baking and finding new recipes has become like therapy for me!!! It’s also fun and of course it tastes good too!!
Over the weekend I made these Chocolate Coconut Squares and they came out really good. Not only are they good… They don’t require you to bake them in the oven and there aren’t a ton of ingredients involved. Sounds amazing right!!!

Here’s what you need…
Baking & Spices
3/4 cup Dark chocolate chips (I used semi sweet)
1/2 tsp Salt
2 tsp Vanilla extract
Oils & Vinegars
1 cup Coconut oil
Nuts & Seeds
2 1/2 cups Coconut, sweetened (I used unsweetened)

- You mix in the Coconut oil, Vanilla, salt and Coconut flakes together. Spread it in to a pan and stick it in the freezer for 30 mins. (don’t be like me… I made the mistake in using sea salt instead of regular salt. It still came out good, just had a little bit of extra salty flavoring)
- After the 30 mins, you then melt the chocolate and pour that in to the pan over the coconut mixture. Then stick the pan back in to the freezer for another 30 mins to let the chocolate set.

I did use a round pan, and I think it worked out just fine. Placing parchment paper in the bottom of the pan helped so much when I was ready to start cutting the bars. No stress, no sticking and way less mess!!
This is a recipe I will definitely will be trying again, especially because the oven is not involved!! When the summer hits, no one wants to be in a hot kitchen, so this is perfect to try out during that time!! Let me know what you think if you try it out.
