Quarantine Baking

I don’t know about yall, but since being in quarantine I have been baking all different things at home lately. I have a whole page on my pinterest board full of different desserts, smoothies and food that looks amazing and have been wanting to try. This is the perfect time to actually put those pins to use, and I have. Here is one recipe that I have tried lately that I have made a few different times already. It is a Vegan Lemon Loaf!!! It’s super easy and doesn’t require a ton of ingredients.

I haven’t talked about my diet or a lot of stuff that I eat here on the blog yet. I don’t think… but a lot of what I eat is mostly plant based with Eggs, Chicken or some sort of Fish on occasion. I am more of a conscious eater and don’t claim any thing specific. I can go more in to detail on all of that later in a different post. Any way I said all of that to say that I don’t do dairy at all, so most of the recipes that I make are Vegan and soooo good!! One thing that I will never give up is sweets, and I like finding “healthier” alternatives to the snacks and desserts that I just can’t get enough of. Heres how I made the loaf. There were a few ingredients that I didn’t have at the time, so I did a few substitutions and it still came out just fine. First thing you want to do is Pre Heat your oven to 350 degrees.

Ingredients:

  • 2 cups Oat Flour

  • 1 1/2 tsp baking powder

  • 3/4 tsp salt

  • 1/4 tsp baking soda

  • 1 cup sugar (Half coconut sugar/Half reg. sugar)

  • 3/4 cup Almond Milk

  • 1/2 cup vegan cream cheese

  • 1/4 cup oil

  • 1/4 cup lemon juice

  • zest of 2 small lemons (This is important)

  • 1 tsp pure vanilla extract

    • Mix ingredients together

    • bake for 55 mins on 350

I also made a frosting. It was made of…

  • 1 cup of powdered sugar

  • 2 tbs almond milk

    • Mix it together until smooth

Once the cake was done and cooled off I added the frosting. I let the frosting drizzle over the top and set before digging in. Heres what it looked like once I was done.
